The bin audit that changed the canteen

A student team at Kellerman High weighs a week of rubbish, follows the evidence, and wins real change. Then it is your turn.

Kellerman High has about 900 students, a busy canteen, and bins that empty themselves as far as anyone can tell. In term 1, a team of six students in the environment group decides to find out what is actually in them. They borrow luggage scales, gloves and a tarp, and for one week they weigh and sort every bag of waste the school produces each afternoon.

The numbers surprise everyone, including the team. The school fills an average of 21 bags of general waste a day, weighing about 96 kg, which adds up to roughly 480 kg for the week. Sorting on the tarp shows that 41% of the general waste by weight is food: unfinished lunches, whole pieces of fruit, and canteen leftovers. Another big share is packaging that could have been recycled but never reached a yellow bin.

The recycling bins have their own problem. When the team sorts their contents, 28% by weight does not belong there: soft plastic wrappers, half full drink bottles and food smeared containers. The cleaner tells them what that means in practice. When a recycling bin looks too contaminated, the whole bag goes in with general waste, because one dirty bag can spoil a truckload.

Then the team traces the waste back to its sources, and one stands out. The canteen and the eating areas around it produce more than a third of everything: plastic clamshell containers, sauce sachets, wrapped cutlery, and a steady stream of barely eaten food, especially on days when lunch lines are long and eating time is short. The single biggest source of waste at Kellerman High is lunch itself.

The team writes a two page proposal with three changes. First, a compost stream: green bins for food scraps at the eating areas, collected for the school garden and a council organics pickup. Second, canteen packaging: swap the plastic clamshells and sachets for paper wrap and bulk sauce pumps, which the canteen manager agrees to trial once she sees the numbers. Third, a sorting station: one clearly signed set of three bins, landfill, recycling and compost, at the canteen exit, with photos of real items on the signs instead of words alone.

The principal approves a trial, mostly because the proposal contains weights instead of opinions. A term later, the team repeats the audit for a week. General waste is down to about 70 kg a day, a drop of just over a quarter. Contamination in the recycling bins has fallen from 28% to 15%. The compost bins collect around 30 kg of scraps a day, although the team finds wrappers in them most afternoons, and Friday remains the worst day for everything.

The team digs into the Friday problem rather than guessing at it. They map the timetable against the bin weights and find that Friday has the shortest lunch break of the week, squeezed by an early finish, and that the canteen runs a hot food special that day which draws the longest lines. Students who queue for most of the break have only a few minutes left to eat, so more food goes in the bin barely touched. It is the same pattern the first audit hinted at, long lines and short eating time, now sharpened to a single day. The fix is not more signs; it is more time to eat, which means talking to whoever builds the timetable.

The wrappers turning up in the compost bins get the same patient treatment. Rather than blame the students, the team watches the bins during lunch and notices that the compost bin sits at the end of the row, after people have already balanced a tray, a drink and a wrapper in two hands, so the wrapper follows the food scraps in by accident. Moving the landfill bin to sit first in the line, with compost second, cuts the stray wrappers without a single new poster. It is a small reminder that a lot of contamination is about bin order and layout, not laziness.

It is not a perfect result, and that is the honest lesson. The waste did not disappear; it shrank and moved to better streams, because a small team measured before arguing and proposed changes the school could actually run. The canteen manager, once the sceptic, now reports her packaging costs are slightly lower. The next team's job is Friday.
